Seven Springs Vineyard is a premium wine producer, situated on the R320 Hemel-en-Aarde Valley road, between the seaside town of Hermanus and the Spa Town of Caledon, in the picturesque Western Cape, South Africa. The vineyard nestles between Shaws Mountain to the north and the Teslaarsdal Mountain Range to the south, with Walker Bay and the Atlantic Ocean beyond these mountains. It is this oceanic influence, coupled with the shale derived soils, known locally as Bokkeveld Shale, that gives their vines the potential to produce exceptional grapes from both north and south facing vineyards. Noble varieties, Chardonnay, Sauvignon Blanc, Syrah and Pinot Noir, have been planted to express the full potential of each cultivar. Tim and Vaughan Pearson purchased the land in 2006 and commenced in the vast task of planting this promising but yet to be planted piece of land. With the help of their team, Seven Springs is making big strides in a region that produces some of the best wines throughout South Africa.
Peter Davison (Vineyard Manager) and Riana van der Merwe (Winemaker) are getting plenty of acclaim for this lovely vineyard and its beautifully crafted wines.

Winemaker profile - Riana van der Merwe

Riana is a young female South African winemaker who gained experience after graduating (Stellenbosch) by working in various South African cellars, like, L’Ormarins, Seidelberg, Hidden Valley and Backsberg. She also has some international wineries under her belt, with a season in California in 2007 and the Northern Rhone, France in 2008. In 2010 Riana came to Seven Springs, highly recommended by Backsberg‘s winemaker, Guillaume Nell. In the winter of 2010 Riana did another season in the USA, in Oregon where they specialize in Pinot Noir. Riana is making some beautiful wines for Seven Springs and is learning all the time.

Seven Springs Un-oaked Chardonnay 2014

Harvested on the 21st of February at optimal ripeness. At the winery it was processed to a clear juice and then inoculated with yeast a few days later. The yeasts selected were chosen specifically to enhance and express the natural characteristics of the Chardonnay fruit. Much like their Sauvignon Blanc it was left after fermentation on the lees, which was stirred regularly.
This has enticing aromas of crushed almond which melds with citrus peel and a flint.
Although dry this has some tropical fruit flavours, along with Sicilian lemon which are perfectly balanced by a steely lingering minerality.

Seven Springs Sauvignon Blanc 2013/14

At the cellar the grapes were processed reductively (keeping oxygen away during production). The juice was inoculated with a variety of yeasts to better express the characteristics of the fruit.
The wine was cold fermented in stainless steel tanks. The wine was then left on the lees to age for 4 months, with the lees being stirred regularly in an aid to soften the palate.
Pale straw in colour. Has a delicate nose of peach and apple with tantalising ripe fruit on the palate. It is a light refreshing wine which has a delicate lasting finish.

Seven Springs Chardonnay 2014

Fermented and aged in second and third fill, 300L barrels of which 20% was American oak and 80%
French. After fermentation the wine was left to mature on the lees for 11 months to aid in the
development of the creamy palate. No malolactic fermentation was done.
Honeyed fruit, lemon and buttery oak are all present on the nose. Dry with a touch of residual sugar the palate is creamy yet has mineral focus. Second fill barrels means that the fruit and oak are in perfect harmony from start to end. Stunning. Potential to age, now to 2019.

Seven Springs Syrah 2012/13

7Springs Syrah 2012 - Newton Wines

Produced from very young vines, the wine was aged for 12 months in second and third year French oak barrels. This ensures the oak influences are understated and allow the opulent dark cherry and red berry flavours to dominate, along with hints of pepper and spice. On the palate it is rich and textured.
The Wine Gang review for Syrah 2010 – The nose is opulently rich and crammed with plum and red berry fruit. Ageing in older French barrels adding some spice and delicate smokiness, with a hint of crisply-grilled bacon fat. On the palate it is fresh and vibrant, with real depth but bounding youthfullness and ocean-influenced clarity. Drink now – 2017
Decanter Gold Medal Winner (Syrah 2012 vintage) has red and dark berry fruit with some white pepper and spice rounded by judicious use of oak. A beautifully made wine which is rich yet shows that the winemaker has let the fruit do the talking. Needs decanting. Drink 2015 – 2025

Seven Springs Pinot Noir 2013

Seven Springs Pinot Noir from Newton Wines

The 2012 vintage was a bigger year in the way of tannin in the fruit picked. The first fruit was harvested on the 14th of February with picking continuing on the 15th. The grapes were destemmed and lightly crushed into stainless steel tanks. The fruit was left to soak for a few days at a minimum temperature of 10⁰C. The cooling was then turned off and the temperature of the fruit increased and with that wild fermentation started. After fermentation the grapes were pressed lightly and moved to old French oak barrels and matured for 10 months.
A beautifully balanced, vibrant wine showing a complexity that belies the age of the vines. Pale garnet in colour, with delicate woodland and truffle aromas, the wine offers opulent red berry fruits, cherries and strawberries. The oak, as always, is subtle, supporting the lingering crisp finish.
